Okay so we made it through a week without starving to death. We did use a lot of our pantry items though, so I can't really say we only ate $65 worth of groceries. Here's a list of what I can remember we ate for dinners:
Creamed Spinach on pasta
Chicken salad sandwiches with sweet potato fries
Vegetarian stir fry
Crock pot beef (from the freezer)
A nice meat and veggie marinara sauce with pasta
A lot of the food seems to go for lunches. John and Hunter take their lunches and I always try to have fruits and veggies in those. The produce seems to go there. I figure when Hunter grows up he will confess to me that he threw half of his lunch away! We went through 2 small jars of p-nut butter as well.
I got better deals this week and have about $3 left. Here is what I got and this is what I plan:
Tonight I made beef enchiladas with some of the ground beef I cooked from last week. There is still some left over so it will be put on pizza friday pm.
Broccoli soup... Broccoli was on sale $1 per bunch and I have a little left from last week. Cheese still left from last week
Waffles with sausages (on sale $2) and fruit salad
Brisket ( 40% off!) with yukon gold potatoes
That is all I have planned out at the moment
I was actually able to do some stocking up with the cereal (5 for $10 and you got a free gallon of milk with that) and 3 p-nut butters for $5 (for most families that would be for stocking up, but not this one)
All in all, I think we will do pretty well this week. Not too unhealthy. We'll check back when we can..PS if you have time, check out the 20/20 program on Appalachia. I just did a google seach with 20/20 Appalachia and was able to watch it in small segments. It was an absolute shock to me to see how poor those people are. It has a portion talking about the condition of their teeth. Seems they all drink a lot of Mountain Dew and it has just rotted their teeth out. Very sad situation.
